The Man Behind the Legacy
When that vision arrived in Central Oregon in 1996, it carried far more than family recipes. It carried patience. Tradition. A reverence for craftsmanship, and an unwavering belief that every guest deserved to be welcomed like family.
That vision belonged to founder Don Roberto Anaya.
What began with a single dining room soon inspired an entire movement. Generations of families discovered authentic Mexican hospitality. Neighborhood traditions were born. Celebrations found a home—and a new appreciation for the richness of Jalisco’s culinary heritage quietly took root across Central Oregon.
Some legacies are measured in buildings. Others are measured in the lives they quietly touch. The greatest ones become part of a community’s story.
Today, Jimador Bar & Grill honors those beginnings—not by looking backward, but by carrying forward the same philosophy that welcomed the very first guests.

From the fields of Jalisco to your glass
Harvested, cooked, crushed, boiled, fermented, distilled, and rested in oak — the patient craft that carries the agave from the earth to your glass.

The Jima
With the coa de jima, the jimador trims away the leaves to free the piña — the agave's sweet heart, ripened over six to eight years.

The Cooking
The piñas are slow-cooked in stone hornos, where the heat transforms the agave's starches into sweet, caramelized sugars over many hours.

Crushing & Fermentation
The cooked agave is crushed to release its juice, which is then brought to a gentle boil and left to ferment — where natural yeasts turn sugar into the soul of the spirit.

Distillation & The Barrel
Twice distilled in copper stills, the spirit is laid to rest in oak barrels — where time, wood, and patience give tequila its color, depth, and character.

Reposado, meaning ‘rested,’ ages between two and twelve months in oak barrels, developing notes of vanilla, honey, caramel, and gentle spice while preserving agave character.

Añejo tequila matures for one to three years in oak barrels, creating extraordinary depth with notes of dark chocolate, toasted oak, dried fruit, caramel, and rich complexity.
